There’s no need to throw away over-ripe tomatoes. Instead make them into this delicious soup that is super easy to put together. If you’re not a fan of mushrooms, you can omit them.
Ripe Tomato Soup is:
- vegan
- dairy free
- gluten free
Ingredients
2-4 cups water
4-6 ripe tomatoes
2-4 cloves garlic, finely chopped
¼ cup wild rice
4-6 shiitake mushrooms, sliced
Salt to taste
Fresh Spinach
Fresh Basil
Directions
1. Remove any spots and blemishes from tomatoes
2. Chop tomatoes roughly
3. Add water and chopped tomatoes to saucepan. If you want a less chunky soup, lightly blend tomatoes with hand blender
4. Add chopped garlic, wild rice and sliced mushrooms
5. Simmer gently, stirring often, for 15-20 minutes, until wild rice splits
6. Add salt and pepper to taste
7. Serve over a handful of fresh spinach leaves
8. Garnish with chopped fresh basil
